Product Description

A 15-inch diameter, 3 inch deep terra cotta cazuela dish is a good size to cook garlic shrimp, fideua and all kinds of other paella dishes and other traditional dishes such as fabada for a large group. Terra cotta is basic clay, low fired with an interior glaze. Our premium cazuelas are unique in that they are made by potters following the traditional Roman formula of mixing tiny pebbles into the clay which strengthens the dish and increases its heat retention. The handles are applied by hand. La Tienda is the only source of this kind of cazuela in America. The glaze on the cazuela is perfectly safe for all applications -- it contains no lead. We provide directions for a simple seasoning (essentially soaking in water for a few hours) which renders the cazuela good for stovetop, oven or microwave. When cooking with terra cotta, the key is to increase heat gradually.

5Perfect On the Stove or In the Oven, Dinners for 6-10.

Putting a clay pot on the burner to saute' or boil, then into a hot oven to bake, and finally onto the table as a serving dish (like they do in Spain) certainly saves on pots and is more than a little fun. It is heavy and food stays hot for a long time. For best results your largest burner should be forward where you can center this dish that has a 15" outside diameter.Some care in applying heat gradually is best, and don't plunge a hot pot into cold water. Half-filled is dinner for eight.After paging through Claudia Roden's ecellent "The Food of Spain," I just had to have this.

I love this item. It is such an addition to my kitchen. It is impressive in size and weight! I am passionate for food, and have recently been turned onto clay cooking. I purchased a Tagine and a Chamba, so this cazuela should feel right at home! :)
