My wife just gave me this terrine (I've been waiting for a proper Foie Gras terrine for years now ...), and I've just finished preparing my first foie gras in it.The size is perfect for cooking a small / average size foie gras (the one I had was 1.4lb, which I'd consider on the bigger size to my taste, and it did fit perfectly).I would not recommend cooking 2 foie gras at the same time in this terrine though.It looks great, and, to my surprise comes with a press (I know the description mentions it, but as a "gift" I had only seen the picture), which is great if you want to make your foie gras look more "professional".The recipe which comes with it seems more than half decent, however I'd recommend a lower temperature for cooking it (max 185F), and rather than leaving your foie in the oven for a set period of time, simply monitor it. If your foie is really fresh and you want it on the less cooked side of thing, you can stop the cooking as soon as you start seeing the fat "pearls" from the Foie. If it's not as fresh / want it slightly more cooked, then wait for about 1/8th of an inch of fat to float on top (but don't let the foie shrink too much). Slow cooking makes it easier not to screw things up, as leaving the foie cooking a little longer will have a much smaller effect on its final taste than a higher temperature.I left mine something like 45 minutes, but didn't even bother looking at for the first half hour.All in all, this item is great : looks good, has the right "texture" inside, its size is perfect for 1 foie gras, its thickness is exactly what I was looking for, it's one of the bench french brand of cookware, has a press and a cover, and the price is actually really LOW.

I agree with the reviewer who mentions that the packaging is poor, and I can see how the handles *could* break in transit, but mine didn't. The box arrived with many "fragile" stickers and the terrine intact. This is really a foie gras terrine, but it is also suitable for a pate terrine. At a .75 (or so) qt capacity, you will likely need to use half a recipe for a pate, but that is a good size for my family. The press is nice but not heavy enough for many terrine uses, yet there is no reason you can't just put a can of green beans or something on top of the press to increase the weight.The terrine itself is absolutely beautiful (I got the flame one), and even though it is stoneware, it matches Le Creu pots and pans perfectly. It would be a beautiful vessel for serving a terrine at the table if you prefer, and I am really, really glad I bought this. The price is a steal.

Used to using the larger, standard terrines in professional kitchens, I knew I'd rarely ever use one that large at home. This is the perfect size. This can be used for anything from terrines to pates to rillets or anything else. It's small enough to even use for spreads or sauces with large groups. Plus it just looks fantastic. The terrine weight is helpful, but like the other reviewer said, it may sometimes need some extra weight on top. Because it is thick and durable, it will hold up well to various temperature extremes (like baking pates or chilling terrines).
